Brinjal sambar or Badanekayi sambar is one of the unique and tastiest sambar…It can be savored with Idli, Dosa, appam, Rice, etc. In today’s blog, I am going to share the recipe for Brinjal sambar/ Badanekayi sambar.

Ingredients
  

  • 1 medium Sliced Onion
  • 1 chopped Tomato
  • 1 handful Coriander leaves
  • 3-4 Garlic cloves
  • 1 tbsp Red chili Powder
  • ½ tbsp Garam Masala
  • 2 tbsp Sambar Powder
  • 2 tbsp Oil
  • ½ tbsp Mustard seeds
  • ½ tbsp Cumin seeds
  • 4-5 Curry leaves
  • ¼ th cup of sliced onion
  • 1 cup of Brinjal dices
  • 1 cup Soaked Tur dal
  • 1 tbsp Salt
  • 1-2 tbsp Chopped Coriander leaves

Instructions
 

  • Take a jar and add 1 medium Sliced Onion
  • Add 1 chopped Tomato
  • Add 1 handful of Coriander leaves
  • And add 3-4 Garlic cloves
  • Next, add 1 tbsp Red chili Powder
  • Add ½ tbsp Garam Masala
  • Add 2 tbsp Sambar Powder and grind it into smooth paste Or coarse paste if you like.
  • Take a deep vessel and add 2 tbsp oil and heat it.
  • Add ½ tbsp Mustard seeds
  • Add ½ tbsp Cumin seeds
  • And add 4-5 Curry leaves and let them splatter
  • Now, add ¼ th cup of sliced onion and saute
  • Add 1 cup of Brinjal dices and saute
  • Then, add Masala paste into it
  • Add some water to the jar and add that water to the vessel.
  • Now, add 1 cup Soaked Tur dal into it
  • Add 1 tbsp Salt
  • Add the required amount or 1 glass of water according to the desired thickness of the sambar and mix.
  • Close the lid and cook
  • Bring to boil and stir in the middle
  • Lastly, add 1-2 tbsp Chopped Coriander leaves and mix.
  • Now the tasty Brinjal sambar is ready to savor

Then, add Masala paste into it

Add some water to the jar and add that water to the vessel.

Now, add 1 cup Soaked Tur dal into it

Add 1 tbsp Salt

Add the required amount or 1 glass of water according to the desired thickness of the sambar and mix.

Close the lid and cook

Lastly, add 1-2 tbsp Chopped Coriander leaves and mix.
