Our Indian thali includes so many amazing dishes…Besides curry and sambar, our ancestors have added so many side dishes like Pickle, Khara, dry Chutney, Coconut chutney, raita, etc. Ranjaka is one such side dish…In today’s blog, I am going to share the recipe for Ranjaka or Kempu Kara…

Ingredients
  

  • 15-20 Dry red Chilies
  • 1 cup water
  • 5-6 Curry leaves
  • 1 tbsp Salt
  • 1 tbsp Jaggery
  • 5-6 Garlic Cloves
  • 1 Lemon size Tamarind
  • ½ cup Coriander leaves

Instructions
 

  • Heat a pan add 1 cup water, Bring it to boil
  • Add 15-20 dry red chilies
  • Boil them till they become soft
  • Once they are soft, turn off the gas and let them cool
  • Transfer them to a plate and cool them
  • Now, transfer them into a mixer jar
  • Add 5-6 curry leaves
  • Add 5-6 garlic cloves
  • And add 1 lemon size tamarind
  • Then, add 1 tbsp Jaggery
  • Add ½ cup Coriander leaves
  • Grind them into a coarse paste or Smooth paste
  • Now, add 1 tbsp salt, as per taste, and grind it again
  • Now, the tangy and tasty Ranjaka is ready to savor.

Instructions with Images

Heat a pan add 1 cup water. Bring it to boil

Once they are soft, turn off the gas and let them cool

Transfer them to a plate and cool them

Now, transfer them into a mixer jar

Add 5-6 curry leaves

Ranjaka

Add 5-6 garlic cloves

And add 1 lemon size tamarind

Then, add 1 tbsp Jaggery

Add ½ cup Coriander leaves

Ranjaka

Grind them into a coarse paste or Smooth paste

Now, add 1 tbsp salt (as per taste) and grind it again

Now, the tangy and tasty Ranjaka is ready to savor.
