In today’s blog, I am going to share the Brinjal pachadi recipe. Salads are one of the most loved and savored foods in our daily diet. Salads are healthy as well as tasty. We can find thousands of salad recipes in the world with different names. In North Karnataka, we call it pachadi. Pachadi can be made using different veggies and green leafy vegetables. Pachadi can be made using a single vegetable as well as using multiple veggies. Whenever you make any dal or pulses curry, you can prepare it for the best combination.

Brinjal Pachadi Recipe
Ingredients
- 2 Big-sized Brinjals
- 1 Medium-sized onion chopped
- 1-2 Tomatoes
- 1-2 Green chilies Optional
- 1 &½ tbsp Red chili Powder
- ½ tbsp Niger seeds powder/ Gurellu powder/ Uchhellu powder
- 2 tbsp Coriander leaves
- ½ tbsp Salt
- 1 tbsp Oil
Instructions
- In a mixing bowl add 2 big sized brinjals cut into dice
- Add 1 chopped Onion
- Add 1-2 chopped Tomatoes based on your requirements
- Now, add 1 chopped green chili
- Add 1&½ tbsp Red chili powder
- Add ½ tbsp Niger seeds powder
- After that, add ½ tbsp Salt according to the taste.
- Lastly, add 1 tbsp oil for binding.
- Add 2 tbsp chopped Coriander leaves
- Now, mix everything well.
- Now the tasty and healthy Badanekayi/Brinjal Pachadi is ready.

Add 1 chopped Onion

Add 1-2 chopped Tomatoes based on your requirements

Now, add 1 chopped green chili

Add 1&½ tbsp Red chili powder

Add ½ tbsp Niger seeds powder

After that, add ½ tbsp Salt according to the taste.

Lastly, add 1 tbsp oil for binding.

Add 2 tbsp chopped Coriander leaves

Now, mix everything well.

Now the tasty and healthy Badanekayi/Brinjal Pachadi is ready.

You can enjoy it with Jowar roti, Ragi rotti, and Chapati as a side dish. But, I recommend you eat it with Hard Jowar roti or Hot jowar roti.
