Wash Cauliflower/Gobi in water with salt. Salt helps to remove any kind of dirt in it.
Chopp all the 500 gm of Gobi into small or medium dices as per your need.
Add 2 Tablespoon Salt
2 Tablespoons of Red chilly powder
1/2 Tablespoon of Turmeric powder
1/2 Tablespoon of Black pepper powder
1 Tablespoon of Ginger Garlic paste
Mix all the ingredients well
Now add 4 Tablespoons of Maida and 6 Tablespoons of cornflour to the mixture and mix it well with hand.
Sprinkle some water into the mixture and mix it well.
Meanwhile, heat the oil in a pan on a medium flame.
Now carefully add Marinated pieces of cauliflower/ Gobi into the oil and fry them until their color turns golden brown.
Collect all the Fried Gobi's into a plate spread with a kitchen towel. It helps to remove extra oil from the Gobi.
The Gobi's are crisp from the outside and soft from the inside. This indicates that the Gobi's are in perfect texture.
Next, Chop ginger, garlic, and onions into small dice.
Take a pan and add 1 Tablespoon of Cooking oil
Add Chopped Garlic
Add chopped ginger
fry them for a minute
Add small diced onions and fry.
Add 1 Tablespoon of chopped green chilies.
Fry all of them for about a minute.
Now add, 2 Tablespoons of Red chilly sauce, 2 Tablespoons of Green chilly sauce,2 Tablespoons of vinegar, 2 Tablespoons of soya sauce
mix them well
Add 2 Tablespoons of Tomato ketchup and mix well
Add 1 Tablespoon of Sugar(Optional)
Now add, 100 ml of water to the mixture and bring it to a boil.
In a bowl take 1 Tablespoon of cornflour and mix it with water.
When the water reduces to 3/4th of its initial quantity, Add the mixture of water and cornflour. Make sure that no lumps should form. Mix thoroughly.
Now take an adequate amount of the gravy and store the rest for the next time.
Add fried Gobi's into the mixture and give a good mix. Fry for some time.
In the end, add chopped coriander or Spring onion and mix well.
Now the delicious and mouth-watering Gobi Manchurian is ready to savor...
